TOMATO PULAO

A tangy rice preparation

Ingredients
  

  • 120 gm Rice
  • 100 gm Tomatoes blanched
  • 1/4 tsp Cardamom
  • 4 no Cloves
  • 1 no Bay leaf
  • 1 no Onion
  • 1 tbsp Coconut milk
  • 15 gm Raisins
  • 1/4 cup Coriander Leaves chopped
  • 1 no Green Chilly
  • 4 tsp Oil
  • 1/4 tsp Turmeric powder
  • Salt to taste

Instructions
 

  • Wash and soak rice for 20 mins.
  • Grind together onion, green chilly, turmeric and coriander leaves.
  • Rub tomatoes through a sieve, mix with coconut milk and add salt.
  • Drain rice, smear ground spices over rice.
  • Heat oil in a pan. Sauté raisins and remove.
  • Add rice to the oil, sauté well; add tomatoes and coconut milk to rice with sufficient hot water.
  • Cook till tender. Serve hot.
