Ingredients
- 2 tsp coconut oil
- 1 lb. shrimp peeled
- 1 tbsp lime juice
- ½ cup vegetable broth
- 1 cup red pepper chopped
- 2 green onions chopped
- 1 cup corn kernels
- 1.5 cups coconut milk
- 1 tsp curry powder
- 1 tbsp dried basil
- 4 cups steamed rice
Instructions
- Heat 1 tsp oil in a deep pan, add shrimps and cook until opaque. Keep aside.
- Add remaining oil, green onions, pepper and corn to the pan. Saute for 2-3 minutes.
- Add lime juice, coconut milk, curry powder and basil and simmer for a minute.
- Add shrimps and cook for a minute. Serve hot with steamed rice.
