  • 2 tsp coconut oil
  • 1 lb. shrimp peeled
  • 1 tbsp lime juice
  • ½ cup vegetable broth
  • 1 cup red pepper chopped
  • 2 green onions chopped
  • 1 cup corn kernels
  • 1.5 cups coconut milk
  • 1 tsp curry powder
  • 1 tbsp dried basil
  • 4 cups steamed rice


  • Heat 1 tsp oil in a deep pan, add shrimps and cook until opaque. Keep aside.
  • Add remaining oil, green onions, pepper and corn to the pan. Saute for 2-3 minutes.
  • Add lime juice, coconut milk, curry powder and basil and simmer for a minute.
  • Add shrimps and cook for a minute. Serve hot with steamed rice.
