Egg Salad Wraps
A flourless protein rich wrap
- 4 eggs hard boiled
- 1 avocado
- 1 tbsp Dijon mustard
- ¼ tsp Basil
- 2 medium Green onions
- salt & pepper to taste
- 4 Romaine lettuce leaves
- Cut eggs into half and remove yolks. Cut egg whites & avocado into small cubes
- Press the folks into the yolks, add mustard, salt and pepper. mix well.
- Place the leaves in a plate, put a spoonful of egg yolk mixture in the center, and top with chopped egg white, avocado & green onion. Fold the salad wrap. serve immediately.
