A complete low glycemic index meal
- 1 cup baby spinach
- ½ cup cooked quinoa
- ½ cup chickpeas canned
- ½ cup red pepper chopped
- ¼ cup cucumber sliced
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1 dash salt & pepper
- For cooking Quinoa
- 1 cup dry quinoa
- 2 cups water
- Put spinach in large bowl & cover with cooked quinoa. Add chickpeas, red pepper & cucumber.
- Drizzle lemon juice and olive oil. Add salt and pepper as per taste. Serve immediately.
- For Cooking Quinoa
- Put rinsed quinoa and water into a pot and bring to a boil. Simmer for 15 minutes on low flame. Check if all the water is absorbed. Serve.
