Ingredients
  

  • 1 cup baby spinach
  • ½ cup cooked quinoa
  • ½ cup chickpeas canned
  • ½ cup red pepper chopped
  • ¼ cup cucumber sliced
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 dash salt & pepper
  • For cooking Quinoa
  • 1 cup dry quinoa
  • 2 cups water

Instructions
 

  • Put spinach in large bowl & cover with cooked quinoa. Add chickpeas, red pepper & cucumber.
  • Drizzle lemon juice and olive oil. Add salt and pepper as per taste. Serve immediately.
  • For Cooking Quinoa
  • Put rinsed quinoa and water into a pot and bring to a boil. Simmer for 15 minutes on low flame. Check if all the water is absorbed. Serve.
